NUT BURGERS

 

Use recipe as a guide, you can substitute any nut and the

amount of nuts just be sure to make them all equal like

1 cup each, 2 cup each, 3 cup each etc.....

 

2 CUPS EACH -- PECANS

                               WALNUTS

                               CASHEWS

                               ALMONDS

                               PISTAHIOS

1/2 cup of finely chopped onion ( I prefer red onions)

1 medium carrot, finely shredded

4 tablespoons of soy sauce or liquid amino acids

(I prefer Braggs Amino Acids)

2 tablespoons of garlic powder

 

Grind each kind of nut separately in food grinder or processor;

1 cup at a time. Place all ingredients in a large bowl and mix well.

Form into patties for your burgers. Top with lettuce and tomatos.

Put between slices of a large portobella mushroom or organic

bread an enjoy.

BROCCOLI EGGS & CHEESE

 

1 Dozen Eggs

3 cups of chopped Broccoli

3 cups of shredded cheese (I prefer cheddar or American)

Season to Taste

3 tablespoons Onion Powder

3 tablespoons Garlic Powder

3 tablespoons Black Pepper

 

In a large bowl combine together eggs, cheese, broccoli and

seasoning Stir until all ingredients are completely mixed and

blended together high powered blender or use half amount

at a time.  Coat baking pan with non-stick spray and

pour mixture into pan. Preheat oven to 375 degrees

Cook for about 15 to 20 minutes until fully cooked

Cut into six equal sections and store or serve.

TEX-MEX EGGS

 

1 Dozen Eggs

1 16oz can Black Beans

1 16oz can of diced Tomatoes (I prefer green chili blend)

2 cups of shredded cheese (I prefer cheddar or American)

 

Strain and rinse black beans

Strain tomatoes removing all excess liquid

Beat eggs until well blended

Spray baking dish with non-stick spray

Spread Black Beans in the bottom of baking dish

Pour eggs over Black Beans

Spread tomatoes evenly over eggs

Sprinkle cheese over entire dish

Preheat oven to 375 degrees

Cook for about 15 to 20 minutes until fully cooked

Cut into six equal sections and store or serve.

EASY BEAN SALAD

  

 (You can substitute any kind of can beans)

1  15-ounce can of Black Eyed Peas, drained and rinsed

1  15-ounce can of Pinto Beans, drained and rinsed

1   15-ounce can of Navy Beans, drained and rinsed

1 cup of frozen corn, thawed completely

1 tablespoon of minced garlic

1 large red bell pepper, diced

1 large green bell pepper, diced

1 large yellow bell pepper, diced

½ of a large onion, diced

½ cup o low-fat Italian salad dressing

2 or 3 tablespoons of Braggs Amino Acids

Toss all ingredients together. Serve cold or at room temperature.

May be covered and stored in the refrigerator or several days.
